Characterized by many as the definitive expression of the quintessential Irish style of whiskey, Redbreast Single Pot Still Irish Whiskey is created from a mash of malted and unmalted barley, which is then triple distilled in traditional copper pot stills and finally matured in a combination of first fill American Bourbon Barrels and first fill Spanish Oloroso Sherry Casks. The inclusion of unmalted barley into the mashbill, along with the tradition of triple distillation, is a uniquely Irish approach to whiskey production. Single Pot Still Whiskey, originating from a single distillery, was once the most sought after whiskey style in the world, but its popularity decreased during the hard economic times of the early 20th century. However, in recent years this style of whiskey has been revived, due to renewed interest from whiskey writers and enthusiasts alike, giving rise to demand for new expressions.
Crafted from single pot still whiskey that are aged in both bourbon and sherry casks for 9 to 12 years, Redbreast "Lustau Edition" Sherry Cask Matured Irish Whiskey is the result of a long-standing partnership between Lustau Bodegas and the Irish Distiller. The whiskey is then finished for an additional 12 months in an Oloroso sherry butt from Bodegas Lustau. The result is a rich, complex spirit with elegant aromas of dark fruits, prune, dates and toasted wood, accented by a touch of liquorice and marzipan. The full-bodied palate offers more depth and a creamy mouthfeel with additional notes of fig, orange peel, toffee, roasted nuts, and toasty grains which merge with bold, resinous pot still spice on the long finish.
