Ransom Spirits "The Emerald 1865" is made from a mash of malted and unmalted barley, malted rye and rolled oats. The Emerald 1865 is the modern interpretation of a mid-1800's Irish Whiskey. The inspiration for the recipe was provided courtesy of a British excise officer who meticulously recorded a similar Irish mash bill in 1865.
Ransom Spirits "The Emerald 1865" is distilled in a direct fired, copper alambic pot still and aged at 30 months in mixed cooperage of 53 and 60 gallons used French oak casks. The complex mash bill has produced a highly aromatic, rich, viscous and vibrant spirit that provides a glimpse into what the fabled Irish whiskeys of the mid 1800's might have tasted like. Ransom Spirits grow a percentage of the barley organically on their own farm, the grains are milled, mashed and fermented in small batches at the distillery and farm in the emerald hills of Sheridan, Oregon. No artificial additives, flavorings or sweeteners have been added.
