Hillrock Estate Distillery "Sauternes Cask Finished" Double Cask Rye Whiskey is their “grain to glass” rye whiskey made from organically grown rye at their own estate. The whiskey is triple matured, first in traditional oak casks, then in charred American white oak barrels and finally finished in premium French Sauternes casks. The American oak barrels were charred with #4 char and air-seasoned for over two years before assembly. The sauternes cask extends a wonderful balance between the spicy rye notes with the mellow, caramel sweetness. Deep golden amber in color, Hillrock Sauternes Cask Finished Double Cask Rye displays a bold nose with complex aromas of allspice, honeydew, nutmeg, clove, salted caramel, and anise. Full-bodied and rich on the palate, sweet, warming notes of caramel and honey are followed by soda bread, pistachio and mint flavors, which blend seamlessly into yellow birch and salt water taffy on the long, structured finish.
