Aged a minimum of 12 years, WhistlePig "Old World" 12 Year Old Straight Rye Whiskey is a 86 proof, 100 percent rye whiskey hand bottled on a former dairy farm in Shoreham, Vermont. Founded in 2010, the WhistlePig Farm Distillery operates under the watchful eyes of Master Distiller Dave Pickerell, who formerly spent 14 years as the Master Distiller at Maker's Mark, and its proprietor Raj Peter Bhakta, who plans to grow organic rye on the farm for use in future batches. In the spring of 2014, Dave began a unique experiment. After studying the time-honored techniques of the Old World, particularly single malt scotch whiskies, Dave and the WhistlePig team finished their bonds of 12 year old rye in premium old world wine casks i.e. Madeira, Sauternes and Port.
WhistlePig "Old World" 12 Year Old Straight Rye Whiskey is a blend of their Madeira, Sauternes and Port cask finished whiskies at a ratio of 63%, 30% and 7% respectively. The result is a rich, complex whiskey offering a bold nose with harmonious aromas of caramel, black cherry, allspice, honeydew, roasted nuts, raisins and oak. Full-bodied with a velvety mouthfeel on the palate, sweet, warming aromas of caramel and honey are followed by notes of rye bread, raw cacao and licorice flavors, which blend seamlessly into demerara, clover, grapefruit and toffee notes on the long, structured finish.
