Midleton "Dair Ghaelach Grinsell's Wood" Single Pot Still Irish Whiskey is the first ever virgin Irish oak finished whiskey for this distiller and thus the name "Dair Ghaelach". This is a blend of single pot still whiskeys that had matured for 15 - 22 years in ex-bourbon casks and married together before being filled into the Irish oak hogsheads. The result is a rich, complex whiskey with notes of banana, pineapple, vanilla, darker woodland spice, cinnamon and coffee. The full-bodied palate offers additional notes of cocoa, fresh straw, vanilla fudge, allspice and oak. Bold notes of spice lingers through the long finish.
