Mette Poire Williams Eau de Vie is crafted from the very aromatic Williams Pear or as known in the USA, the Bartlett Pear. For the Poire Williams, Mette has worked with the same fruit grower for years in the northern Rhone near Valence. The fruit is picked and stored in small wooden boxes to allow all the fruits to mature at the same time. After 7 to 10 days the pear is crushed and put in fiberglass tanks for a natural slow fermentation for eight weeks without any additional sugar or yeast. The eau de vie is double distilled in a copper Charente-style pot stills capturing only the purest part of the distillate. About 11 pounds of pears are required to produce one 375 ml bottle of Mette Poire Williams. It is delicate yet highly concentrated, displaying intense pear aromas, a hint of minerality with a touch of sweetness.
