Inspired by Barcelona’s Mercat de Sant Josep de la Boqueria, Mercat "El Xamfra" Cava Brut is hand crafted by Francisco Dominguez in the cellars of El Xamfra. Grapes are harvested from vines that are 15-40 years old, planted on calcareous and clay soils. Vinified in the traditional method, this cava is aged for 18 months, twice the minimum requirement for the DO. The result is a soft golden colored sparking wine with aromas of bright peach, pear, honey and subtle notes of white asparagus and dried herbs. With less than 8gr/l dosage, the palate is dry, fresh and vibrant with additional notes of white flower, sweet spice and dried apricot. Hints of hazelnut and papaya lingers through the long, dry finish.
