Del Maguey Single Village Mezcals are created in extremely small quantities following traditional production methods developed in the 16th century. The hearts of the agave are roasted over hot stones in a put in the ground for three to five days while covered in earth, ground to a mash using horse-powered stone mills, and then naturally fermented in wooden vats. The spirit is then created using two slow distillations in wood-fired clay or copper pot stills. The result is unlike any spirit you have experienced before. Smoky, earthy, and stunningly complex, each bottle is a unique experience.
Del Maguey Iberico is made with 100% agave Espadin in the town of Santa Catarina Minas during the month of December through mid-spring due to the special ingredients: wild fruits that must be in season and can not be substituted. The process begins with double distilled mezcal Minero made from 100% organic maguey. A separate distillation takes place to extract aromas of wild mountain apple, plum, big red plantain, pineapple, almonds and few pounds of uncooked white rice added to the mezcal Minero. Then a piece of Pata Negra (Jamon Iberico) is suspended in the still and a slow, third distillation is performed. The resulting mezcal offers an amazing concentration of aromas both on nose and palate.
