Clos de Gat is situated in foothills of the Judean Mountains, bordering Israel’s biblical Ayalon Valley. The region’s rolling hills and valleys have supported grapevine cultivation for thousands of years. The combination of thin topsoil on a bedrock of limestone, together with a unique micro-climate make it possible to grow grapes of outstanding quality. The vines are trimmed to approximately 5000 kg per hectare; the low yield helps ensure the consistently high quality of the grapes. Clos de Gat also relies on the vineyard’s natural yeasts for the fermentation process, imparting greater layers of complexity to the wines granting the fullest expression of the estate’s superb “Terroir”. The red wines are made using both open and closed stainless steel, temperature controlled fermentation tanks. After barrel aging the wines are transferred to settling tanks for several weeks prior to being bottled unfiltered. The juice of the Chardonnay grapes, after pressing, is transferred into French oak barrels for alcoholic and malolactic fermentation. The wine is then aged on its lees for twelve months.
Aged for four years in French oak barrels, Clos de Gat "Sycra" Muscat is a blend of 85% ‘Muscat of Alexandria’ and 15% Viognier. This exotically-delicious dessert wine, displays a beautiful golden hue on the glass, offering generous, complex bouquet of aromas dominated by honeysuckle, jammy fruits, dried apricots, orange peel and spices. Mirrored on the palate, the creamy texture is complemented by vivid fruit flavors, delicate acidity and a smooth, elegant finish. This is an excellent pairing for foie gras, tropical fruits and strong blue cheeses.
