Cacao Prieto was founded by Daniel Prieto Preston, an inventor and aerospace engineer, whose family has been farming organic cacao and sugar cane in the Dominican Republic for more than 100 years. Organic sugars from the Dominican Republic, as well as organic cacao beans from the family's Coralina farms, are transported to Red Hook, Brooklyn, where they are expertly transformed into artisanal rum, liqueur and chocolate.
Cacao Prieto "Widow Jane Hopi Blue Corn" Bourbon Whiskey is pot distilled in Red Hook, Brooklyn and aged for 10 months in American oak barrels. This single barrel whiskey is crafted from organic hopi blue corn, organic rye and organic two row barley. Like the rest of the products of Window Jane line, the Hopi Blue Corn Bourbon Whiskey is also a farm-to-bottle spirit without the use of any genetically modified corn, grain, yeast, or enzyme. The result is a rich, smooth and well-rounded spirit with layers of ripe cherry, raisin, toffee, clove and caramel complemented by hints of dark chocolate and tobacco on the finish.
