Sangiovese is a red Italian wine grape variety that derives its name from the Latin "sanguis Jovis" i.e. "the blood of Jove". It is the primary grape for Chianti wines and since 2006, the use of white grape varieties such as Malvasia and Trebbiano with Sangiovese Chianti red wine blends have been prohibited in Chianti Classico. Though Sangiovese grapes are used in various Italian wine regions, some of the best Sangiovese wines comes from Chianti and Tuscany regions of Italy. 90 Points - Wine Advocate

Ruby red in color, Castello Di Volpaia Chianti Classico Riserva is created from 100% Sangiovese. The grapes were farmed organically and harvested by hand. After they were destalked and very lightly crushed, the grapes were first fermented for 14 days in their own yeast at temperatures between 80 and 86F. During this phase, they were automatically punched down twice a day to draw out their finest qualities. After macerating on their skins for an additional 7 days, the malolactic fermentation began and finally the wine was moved to barrels, where it was aged for 2 years. The result is an elegant aromatic wine offering notes of spice and red fruit on the nose. The full-bodied palate is well structured with silky tannins offering aromas of fresh strawberry, cherry, tobacco and oak. Hints of licorice lingers through the long, persistence finish.

On the palate it's velvety, with intense, complex persistent apricot, dried fig, toasted almond, date and caramel aromas, yet almost weightless as it layers the apricot, honey and burnt molasses flavors effortlessly from start to finish. Shows amazing harmony, and the flavors last long after there is no liquid on the palate. It will work very well as a dessert wine, with dry confectionary or crme brle, and it will also work well with blue cheeses and foie gras.
