Chokaisan is created using a new strain of yeast derived from flowers, which results in an intensely aromatic sake with bold floral notes complemented by hints of pear and melon. Balanced, smooth, and semi-dry, it pairs perfectly with oysters, cheeses, nuts, or creamy pasta dishes.

Produced in the original Kimoto brewing method, this old-style sake is full-bodied and mellow with high acidity. Earthy notes of mushroom, herb, and mineral complement grilled vegetables, fish, or chicken.

Inspired by the ancient recipe of Hiroemon Takeda, the renowned Samurai and sake connoisseur, Hiro is crafted by the brewery's renowned Toji (master brewer) using only specially polished rice from the Niigata Region. Hiro Junmai Ginjo offers a bright nose of banana, spicy pear custard and vanilla maple nut fudge which leads to a crisp, fruit-forward palate accented by savory notes of sweet potato bread and white mushroom. Enjoy chilled, over ice or in your favorite cocktail.

This daiginjo sake is almost transparently light and delicate, with a winsome natural sweetness and innocent grace that are simply irresistable. It is delicious sipped as an aperitif or served as an accompaniment to salads and light seafood dishes: it goes perfectly with lobster, scallops and any kind of white fish sashimi.

Produced by the Uchigasaki Brewery in the Miyagi Prefecture, this sake stands between junmai and ginjo sakes and offers the best of both. Hoyo "Genji" is relaxed, expressive, and beautifully aromatic.

Kaku-Rei Ume-Shu starts with Niigata prefecture junmai ginjo sake. Specially grown "Koshi-no Ume" are steeped in the sake, and then sweetened with just the right amount of sugar, resulting in a surprisingly balanced, mildly acidic and utterly delicious libation that may just change your perception of plum wine. Unlike many bottlings of ume-shu, this is nuanced, subtle and easy to pair with a variety of desserts.

Kamoizumi KomeKome is sake's equivalent of an off-dry Riesling Kabinett. Mildly sweet, pleasantly tart, and showing enough acidity to keep it balanced, this is a delectable companion to Thai food, spicy curries, and an array of dessert tarts and custards.

This unfiltered sake is voluptuously rich and brimming with exhuberant flavor. Mildly sweet and pleasingly robust, Summer Snow is incredibly versatile for pairing with a wide range of cuisines, including Thai, Vietnamese and Cuban dishes.

Combining the earthiness of the traditional Kimoto brewing method with the delicacy of Junmai Ginjo, this sake is rich, dry, and well-structured. Full-bodied and mellow with soft, tangy notes of fruit and mineral. Pair with heavier foods, such as liver, game, and fried foods.
