This expression of Aberlour 12 Year Old has been bottled omitting modern chill-filtering, allowing the whisky to retain the full flavor of the malt. A rich, fruit-forward nose of strawberry, plum, vanilla, oak and baking spice leads to a rich, full-bodied palate with bright sherry notes balanced by chocolate, toffee, cinnamon and raisin. The finish is long and slightly spicy with hints of sweetness.

"Baby Blue" has the youthful freshness of a traditional corn whiskey, but brief aging in small oak barrels has lent a refined complexity to the spirit. An inviting nose of marzipan, smoked chili pepper, dark chocolate and baking spice leads to corn meal, light caramel and toasted almond on the palate. The long, satisfying finish offers hints of vanilla, clove and oak.

To create Clear Creek's "Apple In The Bottle", carefully selected Golden Delicious apples are actually grown inside the bottle - a labor intensive task that takes place when the apples are still small enough to be inserted through the neck of the bottles. Since Clear Creek does not use preservatives or artificial cleaning solutions, each apple and each bottle must be scrubbed by hand before the bottle is filled with their barrel-aged apple eau-de-vie. The apple will be preserved as long as it is covered by the eau-de-vie.
