This Hudson Valley grower utilizes sustainable farming practices and traditional methods, making this a spirit that's great for Friday night drinks while supporting small agriculture. Each label is hand-numbered with the batch and bottle number, which is particularly worth noting with Core; the distiller often varies the apple composition of the cider with differing varieties. Batch 15, for example, is made with 100% Fuji apples, while some previous batches were made with Red Delicious, Golden Delicious, and varying blends.
