Both the nose and palate offer pronounce notes of fresh, sweet apples accompanied by subtle notes of caramel, cinnamon and honey. The lingering finish is accentuated by hints of oak and baking spice. The potent proof of alcohol makes it ideal for cocktail.

To create Clear Creek's "Apple In The Bottle", carefully selected Golden Delicious apples are actually grown inside the bottle - a labor intensive task that takes place when the apples are still small enough to be inserted through the neck of the bottles. Since Clear Creek does not use preservatives or artificial cleaning solutions, each apple and each bottle must be scrubbed by hand before the bottle is filled with their barrel-aged apple eau-de-vie. The apple will be preserved as long as it is covered by the eau-de-vie.

Though produced in Oregon, Clear Creek "Eau de Vie de Pomme" Apple Brandy is comparable to a fine Calvados. Distiller Stephen McCarthy starts with Golden Delicious apples, and then in keeping with Normandy tradition, ages the spirit in limousin oak Cognac barrels for at least eight years. The spirit retains the fresh, bright character of the apple, but develops maturity and complexity from the oak. This is a complex, entrancing spirit that will please the Calvados and Cognac enthusiast alike.

Several varieties of Normandy-grown apples are used in Daron Calvados Fine Pays d'Auge, combining bitter and bittersweet varieties. The cider is then slowly distilled in copper pot stills, and the eau-de-vie aged in Limousin oak casks. The result is a surprisingly fresh, fragrant, and gentle spirit with bright flavors of apple, pear, and red plum.

Domaine de Montreuil Reserve Calvados du Pays d'Auge starts with extremely ripe fallen apples from each type—sweet, bittersweet, acidic and bitter—allowing for a spirit that encapsulates the nuances of the fruit. To produce this excellent spirit, the cider is fermented sur lie and aged in a large barrel for a year. Then, it is double-distilled and aged in well-seasoned casks. This bottling is blended from barrels an average age of seven years, combining bright, youthful apple aromas and flavors with notes of vanilla, smoke, baking spice, and beeswax.

This Calvados, which is delightfully young and lively, is great as an aperitif or cocktail component.

The apple inside of Pomme Prisonniere was grown inside of the decanter and lends further flavor and aroma to this fine spirit. The apple will last indefinitely as long as it is covered in Calvados.

For each bottle of Cornelius Applejack, over 60 pounds of fresh, Hudson Valley apples are pressed, fermented in bourbon barrels, and carefully distilled in small batches. The resulting spirit displays subtle notes of apple and vanilla which lead to a clean, spiced finish. Enjoy neat, on the rocks, or with your favorite mixer.

About 20 lbs of apples go into every bottle of Laird's Bottled in Bond Straight Apple Brandy. This spirit retains the intense aromas and flavors of the fresh fruit with a hint of warm vanilla and caramel from oak aging. At 100 proof, it is perfectly suited for mixing in a wide array of cocktails calling for applejack or apple brandy.

Lairds Old Apple Brandy Menorval Calvados Prestige Orchard Hill Ten66 Pommeau

It takes about 16 lbs of apples to create each bottle of this aromatic and richly flavored brandy. Matured for 7 1/2 years, Laird's Old Apple Brandy balances the fresh character of fresh apples with warm caramel and spice notes lent by oak barrels. This distinctly American spirit is well-suited for both sipping and mixing.

Menorval Calvados Prestige serves as a fresh, ripe, and delightfully balanced introduction to this superlative distiller. With pronounced apple on the nose and palate, this is an ideal spirit for mixing and cooking, though it makes an excellent pairing for pastries.

Inspired by Pommeau de Normandie, and named for the year of the Norman Invasion of England, Orchard Hill "Ten66" Pommeau is created from New York apple brandy, distilled from apples grown at Soons Orchards and aged in used French wine barrels. The brandy is then blended with fresh, unfermented Soons' cider and put back in the French Oak barrel for additional aging. The resulting Pommeau displays amazing complexities of vanilla, baked apple tart tatin, prunes and toasted hazelnuts with a backdrop of baking spice.
