The first Texas whiskey on the market since Prohibition, Balcones "Baby Blue" is created entirely of roasted Hopi blue corn, a unique strain which has been grown with the same rich color and flavor for thousands of years. "Baby Blue" has the youthful freshness of a traditional corn whiskey, but brief aging in small oak barrels has lent a refined complexity to the spirit. An inviting nose of marzipan, smoked chili pepper, dark chocolate and baking spice leads to corn meal, light caramel and toasted almond on the palate. The long, satisfying finish offers hints of vanilla, clove and oak.

Balcones "Brimstone" is a bold, powerful whiskey created entirely of roasted Hopi blue corn. It is smoked using sun-baked Texas scrub oak, rather than traditional Scottish peat, which imparts an intense campfire smokiness, balanced by complex notes of corn husk, confectioners sugar, graham cracker, chili pepper and stone fruit. Light mineral notes appear on the incredibly long, dry finish.

Balcones "True Blue" Corn Whiskey is the mature, cask strength bottling of the "Baby Blue" whiskey. On the nose, this expression offers bold, complex aromas of chocolate, caramel, toffee, vanilla and coffee, backed by a distinctive note of roasted corn. At 123 proof, the palate makes quite an impression, but the addition of water allows intricate notes of caramel, fudge, orange spice, fresh oak, pear, leather and cinnamon to emerge. Spicy notes of chili pepper appear on the long, warming finish.

Like other single malts, Balcones Texas Single Malt Whisky is distilled from malted barley - the main difference is the unique maturation process. Each batch is aged in several barrels of different sizes and woods, then finished in large barrels composed of various woods. This is done to ensure that the natural flavors of the malted barley are complemented, rather than overshadowed by the wood extraction. By rotating the spirit, different characteristics emerge from each type of wood, depending on the size of the barrel and how long the whisky rests inside. The resulting spirit offers rich, well-integrated notes of pralines, vanilla, brown sugar and caramel, which evolve into ripe pear, citrus fruit and raisin. The lingering finish offers a lovely toasted malt character, accented by oak and spice.
