Matthiasson White Vermouth is created from 100% white Flora grape from Sonoma, California. This grape is a crossing of Semillon and Gewurztraminer. The grapes were picked late, raisined and covered with botrytis before going into an open-top fermenter and aged for 26 months in neutral oak barrels.
Matthiasson White Vermouth uses neutral grape spirits to make infusions of their own blood orange and sour cherries along with some local organic coriander to compliment the aromas of the Flora. The infusion also contains cardoons, cinchona bark, wormwood and blessed thistle to extend slight bitterness and additional complexity. The infusions were added just before the bottling. The result is a vibrant and highly aromatic vermouth with a complex herbal palate accented by elegant floral and citrus notes moving on to a slightly spicy, dry and complex finish.
