The Huchu Homore Brewery is located in the town of Ishioka, in the Ibaraki prefecture, just an hour outside of Tokyo by train. Founded in 1854, Huchu Homare has since become a national cultural landmark, producing on 12,000 cases of sake per year.
Watari Bune is the name of the rice varietal used to produce this sake. Once used with great enthusiasm in the 1920s and 30s, it was difficult to grow and harvest and the farmers and sake brewers discontinued its use. About sixty years later, Takaaki Yamauchi, the seventh generation president and brewer of Huchu Homore learned of this rice strain and was able to track down seedlings that had been preserved, freeze-dried by the Japanese government. Starting with fourteen grams of seedlings, it took three seasons to be able to brew the first batch of the Watari Bune brand. It has since become a cult favorite in Japan among sake aficionados.
Watari Bune "The 55" Junmai Ginjo is floral, fruit-forward and complex with rich notes of honeydew, pineapple, nuts and earth, complemented by lively acidity.
