The origins of this historic bodega date back to 1264 when a Spanish knight named Don Alfonso Valdespino was one of the twenty four knights responsible for expelling the Moors from Jerez. As a reward for his efforts, the king gave him thirty hectares of land and thus began Bodegas Valdespino. Today, they are the only sherry house to make single vineyard wines. The vineyard, Macharnudo, is an appellation onto itself and is the only vineyard in Jerez to be a member of this elite status.
Valdespino "Inocente" Fino Sherry is produced from Palomino Fino grapes sourced from the esteemed Macharnudo Vineyard, located at the highest altitude and on pure Albariza soils (bright white chalk). The wine is fermented naturally for one year in very old oak barrels, then fortified and introduced to the first criadera of the Inocente solera. The wine then undergoes biological aging under veil of flor for over ten years. The result is an elegant, highly aromatic sherry with a pronounced nose of almond, yeast and dried herbs. The dry, balanced palate offers delicate notes of green olive, iodine and sea salt which linger through the firm, clean finish.
