The world famous Tokaj region is located in the north eastern part of Hungary, bordering Ukraine and Slovakia, and covers approximately 5,860 hectares. This prized land is protected in the north by the Zemplen Mountain, is subject to constant humidity produced by the Tisza and Bodrog Rivers, and is effected by warm winds and long summers. These factors contribute specifically to the development of Noble Rot, or "Botrytis Cinerea", which is an essential component of the wines from this region.

One of the world's finest and rarest dessert wines, Chateau Pajzos Tokaji Esszencia is produced from the free-run juice of Aszu grapes - in fact, one 100ml bottle is the result of an entire hectare. Both the nose and palate are incredibly sweet but display perfectly balanced notes of lime, peach, pineapple and honey.
