Distiller Crispin Cain distills each batch by hand, using an antique Germain-Robin cognac still from Domaine Surrenne, France. After distilling his spirit in the cognac still, Crispin uses a Holstein copper pot still to distill it a second time and infuse it with selected botanicals which can include juniper, coriander, orris root, and lemon peel. They source the Hawaiian white ginger from an organic grower on Kauai.
On the nose this gin little more piney than juniper. The aromas of juniper remains subtle throughout and does not overwhelm other notes as it progress through citrus, cardamom and white paper. The palate is clean and fresh. Though very light on the body, it does maintain great overall structure and balance.
