The Sottimano is one of the few estates to produce a dry, still version of Brachetto. The tiny 1.1. hector vineyard is located in the zone of Treiso with twenty year old vines. Using only indigenous yeasts, the fermentation and maceration on the skins takes place for about 7-8 days. The malolactic fermentation is performed in stainless steel tanks, where the wine remains for approximately 8 months. Sottimano "Mati" Dry Brachetto is never fined or filtered. The resulting wine offers bold aromas of ripe strawberries, raspberries, candied fruit and wilted rose. Soft tannins and balanced acidity on the palate ends with a long, dry finish.
