Before absinthe became legal in the United States, this New Orleans native had to be made with an array of substitutes. Now that true absinthe is once again on the market, you can enjoy this spirit as it was originally mixed.

3 oz. Finger Lakes Distilling Company "McKenzie" Rye Whiskey
.75 oz. simple syrup
.25 oz. Pacific Distillery "Pacifique" Absinthe Verte Superieur, or enough to rinse the inside of the glass
3 dashes The Bitter Truth Creole Bitters

Stir with ice and strain into a chilled, absinthe-rinsed cocktail glass. Garnish with a lemon twist.
