I recently got a bottle of this absinthe and was blown away. The louche is very dark, and the taste cools the mouth and gives you that numbing sensation. I recommend this absinthe to anyone wanting to try an authentic absinthe.

Perhaps it was my expectation of the traditional absinthe taste but I found the spearmint notes overpowering all else. I have yet to try the more "modern" interpretations of absinthe.  Call me old fashioned but I will stick with the Jade Liqueurs, Duplais, Clandestine, and yes even Mansinthe.

Herbal, savory, different December 22, 2010

This isnt a traditional absinthe and isn't for everyone. It has the usual anise flavor but with many other very savory herbal nuances. I find this a great appertiffe prior to seafood. Always puts me in the mood for really good shrimp tacos. I love the creaminess of this one!

That's not always a bad thing, but I find the cinnamon too overbearing, and the basil distracting as well.  Had to sink it after my second sip.  Just not my cup o' tea.  I give it 2 stars because it is a quality product, though I personally find it undrinkable.  I wish Lance would create a more traditional absinthe, as I know he possesses the skill to make a fine one.

St. George gets a lot of flack from the absinthe snobs/geeks because it's quite powerful in flavor and 'effect' due to it's particular ratio of traditional and non-traditional herbs ...
I was pleasantly surprised upon opening my first bottle of the stuff, an amazing earthy-herbal-floral perfume within the brandy base(the best absinthes use a brandy/grape alcohol base and NOT grain alcohol as some are, unfortunately .)
A friend was at my place and I had her have a whiff of the un-diluted liquor in the glass.  Her eyes opened wide and she smiled and said "OMG that's so good !"  So, that should tell you what it's all about ... My favorite US-produced Absinthe for sure ... I will be buying more.  Word is they are about to release a blanche/swiss-styled Absinthe soon ...

This is a delectable, herby, delicious Absinthe with a couple of twists.  The brandy base and the use of stinging nettles (among others) gives St. George a very distinctive taste and one I enjoy very much.  Often I find myself just rolling it around on my tongue to try and absorb the complexity of the taste.  It is a little pricier than most Absinthes, but it is quite worth it!

Too sweet, and too much anise.

Still very pleasurable, but I'd say the Vieux Carre from the Philadelphia Distilling company is a large step above this...

I love this stuff.I will admit its not your tradtional tasting absinthe.Its American and I'm proud of it.this does cater to our tastes and its full of perfection.Its different and after a year or so of drinking it I can honestly say you won't regret the purchase.I took it on my honeymoon in Hawaii for heck sake.

Oh, and the folks at St George are some of the nicest I've talked to.especially in this sometimes snobby specialty market.
