Reserve Golden Sands

1.5 oz Appleton Estate "Extra" 12 Year Old Jamaica Rum
0.5 oz St. Germain Elderflower Liqueur
.25 oz Demerara Simple Syrup*
.25 oz Fresh Lemon Juice*
1.0 oz Organic Apple Juice*
.75 oz Raventos i Blanc "L'Hereu" Cava Reserva Brut

Build all ingredients except the sparkling wine into a shaker. Add ice, shake and strain over ice into a highball glass. Top with sparkling wine. Garnish with a lemon wheel and a red seedless grape.
