Tequila Fortaleza is made with 100% blue agaves that are harvested from the Sauza plantation in the town of Tequila. After harvesting they slowly roast the agaves in an authentic brick oven, or horno for 50 to 72 hours and then the cooked agave pinas are crushed using a traditional stone wheel, or Tahona. The crushed agaves are then washed with the pure mountain water from the Volcán de Tequila to separate the pulp from the woody fibers to create the agave juice called mosto. The agave mosto is then fermented naturally for five days in small wooden vats, and then double distilled in small copper stills in small batches.
Fortaleza Tequila Reposado is aged in oak barrels for up to nine months. This elegant, complex spirit is exceptionally smooth and rich offering arrays of complex vegetal character of the agave along with notes of vanilla and roasted hazelnut. The palate is gentle and nuanced with layered flavors of spice, chocolate, butterscotch and vanilla.
