Leviathan II is an expressive peated American whiskey expertly created by Master Distiller Bryan Alexander Davis, the distiller behind Obsello Absinthe and Port of Barcelona Gin. This limited edition, single barrel release is produced by smoking California-grown organic barley with vast quantities of course cut Canadian peat and distilling it in a custom-made, hand-built wooden pot-still. The new make whiskey is then matured for up to four years in French oak casks which previously held Late Harvest Semillon, then bottled unfiltered at cask strength.

At 110 ppm, Leviathan II is the most heavily peated whiskey ever created outside of Islay. Both the nose and palate offer notes of intense barrel char, bitter espresso and dark chocolate, balanced by sweet wine and lush tropical fruit. A touch of spice lingers through the long, smoky finish.
