Established in 2005, Kilchoman is the first distillery built on the Isle of Islay in over 124 years, and is also one of the smallest distilleries in Scotland. They are a farm distillery which grows their own barley, and is one of only six distilleries to carry out traditional floor maltings. This 100% Islay 4th Edition is their all grain to glass release. The barley is grown on the Kilchoman farm and then is peated, malted, fermented, distilled and bottled all on premise. The 100% Islay 4th Edition is a 50/50 vatting of three and 4 year old whisky matured in ex-Bourbon casks.
Kilchoman 4th Edition is an exceptional single malt, displaying inviting aromas of soft peat smoke, dried apricot and spice, accented by a subtle floral note. This particular release shows a bit more maturity over the 1st edition. There’s a healthy balance of sweet malt and fruit alongside the underlying smoke and earth of the peat.
