A few years ago, Derek Grout of Harvest Spirits decided to experiment with the Cornelius Applejack by maturing the spirit in smaller barrels. Unfortunately, the resulting applejack had retained so much oak character that it overwhelmed the natural fruit profile. However, this failed experiment was surprisingly redeemed by a pallet of summer peaches. Derek and his team hand-pitted every peach and added the fruit to the extra-oaked Cornelius Applejack, where the flavors slowly infused over two weeks. It was then strained and transferred back into the barrel where it was matured for an additional year.
The resulting spirit is Harvest Spirits "Peach Jack" Brandy, a mellow, yet full-flavored spirit which truly captures the essence of ripe summer peaches. The applejack base lends pronounced notes of spice and oak, as well as assertive oak tannins which perfectly balance the natural sweetness of the fruit.
Some natural fruit sediment may occur. This is not a sign of defect, but a result of the product containing natural ingredients.
