Excelsior Sauvignon Blanc is crafted from hand harvested grapes for greater quality control. About 35% of the grapes are harvested very early at low sugar levels to bring prominent grassy aromas and freshness to the final blend. The wine was then cold fermented for 15 days at 12-15 degree Celsius and kept in contact with lees for three months to achieve greater fullness to the final wine, offering complex notes of passion fruit, grapefruit and ripe fig on the nose followed by a fruit forward palate with balanced acidity.
