Since 1976, father and sons have been running this small domaine where all the vines are situated in the commune of Chichee about 3 km south of Chablis on the left bank of the Serein. The terroir of Chichee does not yield high alcohol wines and Didier Picq has been keen to keep the need to chaptalize to a minimum by moderating his yields.

Didier prunes very severely in winter and de-buds twice, in May and at the end of June. Picq's low yields give him good acidity, and his wines always have excellent structure. He vinifies only in stainless steel tanks. The wines show notes of honey, citrus fruits, and white pepper, to which they add, as a signature, an unusually rich, fat and firm minerality; they are clean and fine.

This classic, pure, stainless steel-fermented Chablis is a steal. The Picq family knows that quality begins in the vineyard and through careful training and pruning, they have given their entry-level cuvee the breeding of a premier cru. Didier Picq keeps yields very low, so the wine is always nervy, flinty, and mineral-rich. Even the village Chablis can age effortlessly for 10 to 20 years.

Didier's Chablis is an assemblage of a number of different vineyard sites, with different exposures and vines which average 20 years of age. They are all in the commune of Chichee, southeast of the town of Chablis, on high slopes on either side of the Serein river, a very high quality growing area with two Premier Crus: Vaucoupin and Vogros.
