Located in St. Helena, California, Charbay is an independent winery and distillery owned and operated by Miles and Marko Karakasevic. Although originally known for their wine and brandy, they have expanded their portfolio over the years to include high quality vodka, rum, liqueur, tequila, and most recently, whiskey.
In 1999, Miles and Marko distilled 20,000 gallons of bottle-ready Pilsner beer from a Northern California micro-brewery, producing just twenty four barrels of whiskey. Choice hops were added to the beer just before distillation to lend additional floral and spice notes, then the entire blend was distilled on a classical Alambic Charentais Pot Still. Charbay Release II Hop Flavored Whiskey was matured for six years in custom-made new American oak barrels which were charred to #3 Gator Skin, then transferred to stainless steel for three years, where it continued to evolve. The result is a unique and intriguing whiskey offering complex notes of hops, exotic tea, candied fruit and raspberry, accentuated by hints of lavender, juniper and pepper.
