Cave Spring Estate Bottled Riesling is made from some of their oldest, lowest-yielding vines. The vines are spread across seven individual blocks ranging in age from 9 to 39 years, with an average vine age of about 20 years. The wine went through a cool-temperature fermentation
over a 3 week period in stainless steel tanks using a range of selected yeasts to enhance complexity. fermentation was arrested at medium dryness by chilling. The wine remained on the fine lees for 3 months prior to bottling. The resulting wine presents a nose with seamless
aromas of tangerine, lemon and wet slate, with undertones of cut grass and anise. The palate is full, silky and off dry with plenty of acidity offering notes of grapefruit and yellow plum. Subtle notes of fresh basil and crushed-stone lingers through the long finish.
