The Balcones Distillery in Waco, Texas is owned and operated by Chip Tate, an innovative distiller who creates premium, artisanal spirits that pay homage to America's whiskey tradition. Classified as a "Spirit Specialty", Balcones "Rumble" is created from Texas wildflower honey, Mission figs, Turbinado sugar and Texas Hill Country spring water. An inviting nose of honey, wildflower and vanilla leads to a complex, rum-like palate of toffee, citrus, candied fig and chocolate, accented by a hint of licorice. Notes of oak, smoked tea and earth linger through the finish.
