The Balcones Distillery in Waco, Texas is owned and operated by Chip Tate, an innovative distiller who creates premium, artisanal spirits that pay homage to America's whiskey tradition. An older, barrel-proof expression of Rumble, Balcones "Rumble" Cask Reserve is a limited edition "Spirit Specialty" created from Texas wildflower honey, Mission figs, Turbinado sugar and Texas Hill Country spring water. Bright aromas of honey, dried fruit, wildflower and leather lead to a complex, rum-like palate of smooth caramel, creamy vanilla and candied fig. Complementing hints of oak, black pepper and baking spice emerge on the long finish.
