The Balcones Distillery in Waco, Texas is owned and operated by Chip Tate, an innovative distiller who creates premium, artisanal spirits that pay homage to America's whiskey tradition. Balcones "Brimstone" is a bold, powerful whiskey created entirely of roasted Hopi blue corn. It is smoked using sun-baked Texas scrub oak, rather than traditional Scottish peat, which imparts an intense campfire smokiness, balanced by complex notes of corn husk, confectioners sugar, graham cracker, chili pepper and stone fruit. Light mineral notes appear on the long, dry finish.
