In the secluded hollows of the Western Catskills lie the headwaters of the Delaware River, where meadows, woodlands, old farmsteads and small villages stand as relics of a simpler time. Delaware Phoenix Distillery, located in the village of Walton near the banks of the Delaware River, produces artisanal absinthes. The absinthe, hand-crafted with a nostalgic blend of classic European and regional herbs and pure Catskill waters, is produced in a 30 liter, traditional copper still. Individually numbered bottles represent the uniqueness of their small batch production. Thus, there is natural variation from each batch.

Using the same six core herbs as the Walton Waters--grand wormwood, anise, fennel, roman wormwood, hyssop, and lemon balm--Meadow of Love celebrates the region�s bounty with wormwood, hyssop, lemon balm and violet from small farms and local herbalists. The first sip impression is a dry, subtle absinthe due to the hyssop and violet, but over time the grand wormwood steps forward, announcing its presence.

The color of this absinthe is obtained by adding herbs to the distillate, followed by light filtering and racking. As such, a small amount of herbal sediment may find its way to the bottom of the bottle. The color is subject to degradation due to direct sunlight and heat. Over time, the color may become more amber--a color referred to in French as feuille morte, or "dead leaf"--which is a natural process that does not affect the exquisite taste.
