Deep garnet red in color, Aurelio Settimo "Rocche Dell'Annunziata" Barolo is produced from 100% Nebbiolo and aged for 12 months in concrete tanks, followed by another 24 months in big French oak barrels. The vinification was performed according to tradition: fairly lengthy fermentation on the skins (submerged cap for 15-20 days), with frequent breaking up of the cap and pumping over of the must. The result is a robust, concentrated barolo with generous aromas of bright berries, baking spices, cherry, plum and rhubarb. The vibrant palate offers balanced acidity and structured tannins with delicately sweet notes of cherry, cinnamon, truffle, and dark chocolate. A touch of licorice merges with a complex array of herbs and spices on the long finish.

The wine is aged for 12 months in French barriques and 6 months in large Slovenian oak casks, for a total of 18 months, followed by a minimum of 6 months in the bottle. The nose offers intense aromas of red berry fruit, sweet spice and Mediterranean herbs. Ripe red currant, cherry, leather and tobacco appear on the silky palate, where lively acidity and polished tannins lend shape and structure with a savoury and long lingering finish. Upon completion of fermentation, the wine was racked and underwent malolactic fermentation and then aged for 12 months in French oak barrels.
