Deep garnet red in color, Aurelio Settimo "Rocche Dell'Annunziata" Barolo is produced from 100% Nebbiolo and aged for 12 months in concrete tanks, followed by another 24 months in big French oak barrels. The vinification was performed according to tradition: fairly lengthy fermentation on the skins (submerged cap for 15-20 days), with frequent breaking up of the cap and pumping over of the must. The result is a robust, concentrated barolo with generous aromas of bright berries, baking spices, cherry, plum and rhubarb. The vibrant palate offers balanced acidity and structured tannins with delicately sweet notes of cherry, cinnamon, truffle, and dark chocolate. A touch of licorice merges with a complex array of herbs and spices on the long finish.

Ben Glaetzer "Amon-Ra" Unfiltered Shiraz is created from 100% dry grown Barossa Valley Shiraz from vines that are 50-130 year old and aged for 14 months in new French (95%) and American (5%) oak barrels. The viticulture used is standard single wire, with permanent arm rod and spur. The result is a deep purple colored, rich, full-bodied wine with aromas of blackberry, blueberry, licorice and spicy chocolate on the nose. The palate is viscous with firm tannins offering complex aromas of black fruit, cassis, clove, coffee and oak. Subtle notes of sandalwood lingers through the long, pleasing finish.

Launched in 2009, Billecart-Salmon "Sous Bois" Brut is unique in the world of Champagne as it is both 100% fermented and aged in neutral oak barrels. It is created from all three main champagne grapes i.e. Pinot Noir, Chardonnay, and Pinot Meunier. After fermentation, the wine is aged in barrique for up to eight months and then aged for an additional five years in the cellar. The resulting champagne offers is a rich, elegant nose with harmonious expression. The palate offers remarkable finesse, caressing texture and a bracing vivacity balanced with power, maturity and mouth-watering acidity.

The medium bodied, balanced palate offers persistent tannins with notes of dark fruit, cassis, smoked meat and white pepper.

Bold notes of spice and hints of cherry lingers through the long finish.

Bright violet in color, Bodegas La Cartuja Priorat is a blend of 70% Garnacha and 30% Carinena. It is aged for 6 months, half in 225-liter and half in 300-liter French oak barrels.
